Healthy and Delicious Truffles
After going on a truffle making (and eating) binge, my pants started to fit a little more snug than usual. Of course this didn’t make me want to STOP making truffles… just change my approach. That is why these heavenly little balls of deliciousness have been my saviour. How can truffles be healthy you ask? Well, these guys are made almost entirely of… wait for it… prunes and dates!! Add a little cocoa and VOILA! They taste great, have natural sugar and no fat. The perfect snack.
1/2 cup prunes
1/2 cup dates
5 tbsp cocoa powder
1 tbsp maple syrup
1 tsp vanilla extract
Crushed items to roll balls in (I used waffle cones, nuts, extra cocoa powder, and coconut)
1. In a food processor, slowly add in the PITTED prunes and dates until it forms a paste, with no chunks
2. Add in cocoa, syrup and extract and blend until smooth
3. Form into little balls and roll in crushed items
4. Freeze for at least 2 hours. I froze mine overnight! If you have extras, freeze them when not being consumed, these babies do not fair well in the heat.
So simple, so quick and soo good!
