Mornin’ Almond Butter Muffins

I have recently become a working girl, slaving away in Toronto. I have a two hour commute (four hours a day) so haven’t had much time to cook or eat, let alone eat healthy food. So today I spent my whole Sunday cooking up a storm! I made “make ahead” lunch meals.. Butter Chicken, Asian Slaw, Curried Zucchini Soup and Sweet Potato Chipotle Soup. I also made a batch of healthy muffins for those days when I’m on the run and late (so everyday…). These muffins are really healthy but still so tasty.

All ready for a big day!


  • 3 ripe bananas, mashed
  • 1/4 cup almond butter
  • 1/2 cup brown sugar
  • 1 egg white
  • 1 tsp vanilla
  • 1 1/2 oat flour (I didn’t have this so I put 1 1/2 cups whole oats into a blender)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup chocolate chunks
  • 1/2 cup pecans, chopped
  • 2 tbsp flax seed

1. Preheat oven to 350 and grease muffin tin

2. Mix bananas, almond butter, sugar, egg white and vanilla until well blended

3. In a separate bowl, combine the oat flour, baking powder and baking soda

4. A bit at a time, add the dry mixture to the met mixture and mix well

5. Stir in chocolate and pecans

6. Pour into muffin tins.

Makes 12 muffins
